I know you can get rice pilaf in a box at the supermarket but why. It's easy to make at home and there are only a few ingredients. If you don't have orzo pasta, try using broken up pieces of spaghetti. That will work. This is our favorite rice pilaf recipe.

1/4 cup uncooked orzo pasta
1/2 tablespoon extra virgin olive oil
1 1/2 tablespoons butter
1/4 cup chopped onion
1/2 cup uncooked long grain white rice
1 large clove garlic finely minced
1/4 teaspoon dried thyme
1/8 teaspoon black pepper
1 tablespoon flat leaf parsley, chopped (optional)
1 (14.5 ounce) can chicken broth
In a large sauce pan over medium heat, dry toast the raw orzo stirring constantly with a wooden spoon until it’s a light walnut color (2 to 3 minutes). Remove orzo to a bowl and set aside.
Add the olive oil and butter. Once the butter is melted, add the onions and rice. Sauté for five minutes stirring occasionally or until onions are translucent. If the rice starts to get brown, remove from heat before you proceed to next step.
Add garlic, stir for one minute, and then add bay leaf, thyme, pepper and browned orzo. Stir and add chicken stock. Be careful – when the stock hits the pan. There will be lots of hot steam.
Stir once, cover, reduce heat and simmer for 25 to 30 minutes until the liquid is absorbed. Remove from heat, place two paper towels beneath the lid, and let stand another 15 minutes. Add parsley, if using, fluff rice with a fork and taste. Add salt to taste.
-- Linguine with Garlic Shrimp
What You Need
8 ounces linguine
2 tablespoons butter
2 tablespoons olive oil
2 cloves garlic, minced
1/4 teaspoon crushed red pepper
1 pound medium shrimp (31-40 count), peeled and deveined
Cook the linguine according to the directions on the box until al dente.
While the linguine is cooking, combine the butter, olive oil, garlic, and red pepper. Sauté the garlic for about 1 minute. Add the shrimp and sauté about 3 minutes, or until they are pink in color.
Drain linguine and place in a large bowl. Add the shrimp, along with the butter, olive oil, garlic, and red pepper, and toss.
